STEAK GOAT




Material:

    * Goat ribs 5 vertebra
    * Meat tenderizer 1 / 4 tsp
    Mashed potatoes * 75 g
    * Courgette and sweet pepper stir-fry 75 g


 
Seasonings spread:

    * Rosemary 1 / 2 tsp, minced
    * Black pepper powder 1 / 2 tsp
    * Salt to taste
    * 1 tablespoon cooking oil

Hollandaise sauce:

    * 100 ml chicken broth
    * 2 tablespoons red wine
    * 5 grains of black pepper
    * 1 whole red onion, crushed
    * 1 egg yolk
    * 150 gr butter, melted
    * Salt to taste

Method:

   1. spice spread: Mix all ingredients and stir well.

   2. sprinkle with tenderizer goat ribs, coat with seasoning spreads, let stand for 30 minutes
.
   3. sauce: boiled chicken broth, chopped onion, black pepper and red wine down to 2       tablespoons, remove, discard the onion and pepper. broth mixture and cook over low heat, add salt and egg mix. pour melted butter little by little while continuing in the mix well, remove and set aside.

   4. roasted rack of lamb until cooked, remove and serve with hollandaise sauce, mashed potatoes, courgettes and peppers stir-fry.
